Sheet Pan Sausage and Veggies

Sheet pan sausage and veggies are a quick and flavorful one-pan dinner with vibrant veggies and a touch of cajun seasoning. Perfect for busy weeknights!

Ingredients 

  • 1 large broccoli crown , cut into florets
  • 2 bell peppers , cut into 1 inch strips – any color
  • 1 cup baby potatoes , cut in half
  • ½ red onion, sliced
  • 12 oz smoked sausage, cut into 1/2-inch-thick rounds
  • 3 cloves garlic , minced
  • 1 tsp rosemary, chopped
  • 1 ½ teaspoons cajun seasoning
  • ¼ c olive oil
  • Pinch of salt
  • ½ teaspoon freshly ground black pepper
  • ¼ c parmesan cheese , *optional, grated

Instructions 

  • Preheat the oven to 400 degrees.
  • Use a large baking sheet and place the broccoli, bell peppers, potatoes, onion, and sausage on it. Sprinkle all over with the garlic, rosemary, cajun seasoning, salt, pepper and olive oil. Give everything a good stir and make sure everything is spread out evenly on the baking sheet with no overlapping. Sometimes I’ll do this in batches if the sheetpan is too small.
  • Place in the preheated oven and bake for 20 minutes. Take out then stir around the vegetables. I like to flip the sausage to make sure they are getting browned on each side. Put back in the oven and cook for another 15 minutes.
  • Serve with the grated parmesan cheese on top. Eat and enjoy!
