Sometimes I want an apple cobbler without committing to a whole pan sitting on my counter. My version gives you warm cinnamon apples and a soft golden topping in a small baking dish. It serves two, which means dessert tonight without apple cobbler becoming your entire personality for the week.

Key Ingredients for Apple Cobbler
Apple Filling
- Granny Smith Apples – Their tart flavor balances the sweet filling and holds up well while baking.
- Unsalted Butter – Adds richness and helps start the apples in the skillet.
- Dark Brown Sugar – Sweetens the apples and adds a deeper molasses flavor.
- All-Purpose Flour – Helps thicken the juices released from the apples.
- Fresh Lemon Juice – Adds brightness and balances the sweetness.
- Vanilla Extract – Adds warm vanilla flavor to the apple filling.
- Ground Cinnamon – Gives the filling its classic warm spice.
- Ground Nutmeg – Adds another layer of warmth without overpowering the apples.
- Kosher Salt – Balances the sweetness and brings out the other flavors.
- Water – Adds enough moisture to help create the glossy apple filling.
Cobbler Topping
- All-Purpose Flour – Creates the base for the soft cobbler topping.
- Granulated Sugar – Sweetens the topping and helps it bake golden.
- Baking Powder – Gives the topping lift as it bakes.
- Kosher Salt – Balances the sweetness in the batter.
- Unsalted Butter – Adds richness and tenderness to the topping.
- Whole Milk – Loosens the batter until it is pourable without becoming runny.
- Vanilla Extract – Adds vanilla flavor throughout the topping.
- Cinnamon Sugar – An optional finish that adds sweetness and extra cinnamon flavor on top.

Helpful Tips for Making Apple Cobbler
The apples cook for five minutes before baking. This starts softening them while keeping the centers firm enough to finish in the oven.
Look for bubbling filling and an evenly golden topping that springs back in the center. A toothpick should show no wet batter.
I use a 9x6x2-inch oval dish with a 1.1-quart capacity. Two 8-ounce to 10-ounce ramekins also work.

Apple Cobbler
Ingredients
Filling:
- 2 medium granny smith apples, peeled, cored, and cut into 1/4-inch slices or 1/2-inch pieces
- 1 tablespoon butter, unsalted
- 2 tablespoons dark brown sugar, packed
- 2 teaspoons all-purpose flour
- 1 teaspoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Small pinch kosher salt
- 2 tablespoons water
Topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/8 teaspoon kosher salt
- 2 tablespoons unsalted butter, melted and cooled slightly
- 1/4 cup + 2tbsp whole milk , room temperature if possible
- 1/2 teaspoon vanilla extract
- Optional finish: 1 teaspoon granulated sugar mixed with a pinch of cinnamon
Instructions
- Heat your oven to 350°F. Lightly butter a small baking dish or two 8–10 ounce ramekins and place them on a rimmed baking sheet. I used an oval dish measured at 9” x 6” x 2” with a 1.1-quart capacity.

- Melt 1 tablespoon butter in a small skillet over medium heat. Add the apples, brown sugar, flour, lemon juice, vanilla extract, cinnamon, nutmeg, salt, and water. Cook for 5 minutes, stirring gently, until the mixture looks glossy and the apple edges begin to bend while the centers remain firm.

- Remove from the heat and add the apple filling into the baking dish.

- In a small mixing bowl whisk together the flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla. Stir just until no dry pockets remain; a few small lumps are fine. The mixture should be pourable but not runny or too thick. Add in an extra tablespoon of milk if needed.

- Divide the batter evenly over the apples. Spread gently, leaving a few narrow gaps near the edges for steam and bubbling juices. Sprinkle with the optional cinnamon sugar.

- Bake for 30- 40 minutes, rotating the pan once after about 20 minutes, until the filling bubbles at the edges and the topping is evenly golden and springy at the center. A toothpick in the topping should not show wet batter.

- Cool for 10 minutes. Serve warm as is or with vanilla ice cream.

- Cook the apples: Melt 1 tablespoon butter in a small skillet over medium heat. Add the apples, brown sugar, flour, lemon juice, vanilla, cinnamon, nutmeg, salt, and water. Cook for five minutes, stirring gently. The mixture should look glossy and the apple edges should begin bending.

- Make the batter: Whisk the flour, granulated sugar, baking powder, and salt together in a small bowl. Add the melted butter, milk, and vanilla. Stir just until no dry pockets remain. The batter should be pourable but not runny. A few small lumps are fine. Add up to 1 additional tablespoon of milk if the batter feels too thick.

- Top the apples: Spoon the batter evenly over the apple filling. Spread it gently across the surface. Leave narrow openings near the edges so steam and bubbling apple juices can escape. Sprinkle the optional cinnamon sugar evenly over the topping.

- Check for doneness: The filling should bubble around the edges. The topping should look evenly golden and feel springy in the center. Insert a toothpick into the topping. It should come out without wet batter.
