Ingredients

Salmon Patties:
- Canned Pink Salmon – The base of the salmon croquettes! It’s affordable, convenient, and packed with protein.
- Flour & Panko Breadcrumbs – A combo that helps bind everything together while keeping the texture light and crispy.
- Yellow Onion & Bell Pepper – Adds a subtle sweetness and crunch that balances the richness of the salmon.

Tartar Sauce:

- Relish & Capers – Adds tang and a little crunch.

Salmon Croquettes
Ingredients
Salmon Patties:
- 15 oz canned pink salmon , liquid drained, bones removed
- ¼ cup flour
- ½ c panko breadcrumbs
- ½ c yellow onion , diced
- 3 tbsp bell pepper, diced
- 1 tsp Old bay
- 1/2 tsp Garlic powder
- ¼ c mayo
- 1 egg , whisked
- ¼ c dill , chopped
- pinch of salt & pepper
Tartar sauce:
- 1 c mayo
- 1 tsp relish
- 1 tsp capers
- 1 tsp lemon juice
- 1 tsp dijon mustard
- Chopped dill
Instructions
- Add all the ingredients for the tartar sauce into a bowl and whisk together really well until combined. Set in the fridge until ready to use.
- Put all the ingredients for the salmon patties into a bowl and mix together really well. I like to use my hands to do this.
- Shape into patties. It should make about 6-8 patties, about 1/2 inch thick.
- In a large pan over medium high heat, heat some cooking oil. Just enough oil to cover the bottom should be fine.
- Cook the patties for 2-3 minutes per side. You may need to do this in batches.
- Serve with the tartar sauce and enjoy!

How to store and re-heat salmon croquettes
Store the salmon croquettes in an air tight container in the fridge for up to 3 days. The salmon patties also make excellent meal prep. Either freeze the patties before or after cooking. They will last in the freezer for 3 months.

What a delicious and flexible recipe. I used leftover fresh salmon because we happened to find a good deal on it and ate it for dinner last night… and now we’re going to get a second and possibly a third meal out of it because these salmon croquettes are NOBODY’S leftovers… My family was very happy with the flavorful mix of ingredients…and they were crispy, not too dry, but not falling apart, perfect croquette consistency…they cooked up beautifully on the stove in no time at all…and my family was very happy and is looking forward to having them again. Just delicious! We loved the croquettes. I used a remoulade sauce instead of making the tartar sauce. Made it all the easier but wonderful. I served with peas and potatoes.
