Salmon Croquettes
These salmon croquettes are crispy and flavorful with every single bite. They take less than 30 minutes to make and are perfect for meal prep as well.

Salmon Patties:
- 15 oz canned pink salmon liquid drained, bones removed
- ¼ cup flour
- ½ c panko breadcrumbs
- ½ c yellow onion diced
- 3 tbsp bell pepper diced
- 1 tsp Old bay
- 1/2 tsp Garlic powder
- ¼ c mayo
- 1 egg whisked
- ¼ c dill chopped
- pinch of salt & pepper
Tartar sauce:
- 1 c mayo
- 1 tsp relish
- 1 tsp capers
- 1 tsp lemon juice
- 1 tsp dijon mustard
- Chopped dill
Add all the ingredients for the tartar sauce into a bowl and whisk together really well until combined. Set in the fridge until ready to use.
Put all the ingredients for the salmon patties into a bowl and mix together really well. I like to use my hands to do this.
Shape into patties. It should make about 6-8 patties, about 1/2 inch thick.
In a large pan over medium high heat, heat some cooking oil. Just enough oil to cover the bottom should be fine.
Cook the patties for 2-3 minutes per side. You may need to do this in batches.
Serve with the tartar sauce and enjoy!
