These garlic steak bites work with everything: over mashed potatoes, with a side of veggies, or honestly, straight out of the pan with a fork (no judgment here). If you’re looking for a quick, foolproof way to impress without breaking a sweat, this is it.
What is the best cut of steak to use?
Sirloin, ribeye, strip steak, or filet all work great to make garlic butter steak.
I prefer to use top sirloin because it’s easy to cut into strips and doesn’t have much fat. If I’m feeling fancy and want to splurge, filet is the best way to go.
Filets are so tender and juicy, they work very well for making garlic steak bites.

- Oil: Helps get that perfect golden crust on the steak.
- Garlic: Because garlic and steak are a match made in heaven.
- Butter: Melts into the steak, creating an ultra-rich, flavorful sauce.
- Red Pepper Flakes: A touch of heat to make things interesting.
- Parsley: For freshness and a pop of color at the end.
How to make garlic butter steak bites
Cut steak into bite-sized pieces and season well. Let sit for 15 minutes.
Heat oil in a skillet over medium-high and sear the steak in a single layer, letting it develop a crust. Work in batches if needed.

Remove the steak, then melt butter in the same skillet. Add garlic and red pepper flakes, stirring for 30 seconds.
Toss the steak back in and cook for a few more minutes until coated in buttery goodness resulting in garlic steak bites.

Serve hot and I like to put the steak bites on top of mashed potatoes. Sprinkle fresh parsley on top of the garlic butter steak bites and potatoes. There’s nothing better than garlic butter for steak.
What’s the best way to store and reheat leftovers?
Store leftovers in an airtight container in the fridge for up to 3 days.
To reheat, warm them in a skillet over low heat with a bit of butter to keep them juicy. Avoid microwaving, it’ll make the steak tough.

How do I get a good sear on my steak bites?
Make sure your pan is very hot before adding the steak, and don’t overcrowd the pan. Let each piece sit undisturbed for at least a minute before flipping.

Garlic Butter Steak Bites
Ingredients
- 1 ½ lb Steak, top sirloin, strip, rib eye or filets
- ½ tsp kosher Salt
- ½ tsp Pepper
- 1 tsp rosemary, chopped
- ½ tbsp oil, olive, avocado, etc
- 5 cloves Garlic , minced
- 3 tbsp Butter
- ½ tsp Red pepper flakes
- Chopped Parsley for garnish
Instructions
- Cut steak into 1 inch bite sized pieces. Add the steak to a bowl and season with the salt, pepper and rosemary, massage into the steak. Let sit at room temperature for about 15 minutes. Or you can cook right away if you don't have time.
- Heat a large skillet over medium high heat with the oil. Once hot, add the steak in a single layer, let sear for about a minute then stir cooking for a total of 3 minutes. Don’t overcrowd the pan and do this in batches if needed. Remove the steak and set aside once browned.
- Lower the heat to medium and to the same skillet add the butter, and once melted, add the garlic and red pepper flakes, stir for 30 seconds. Add the steak back in and cook for about 3 minutes.
- Remove the steak from the pan. Serve with your favorite sides and garnish with the chopped parsley if using.
