Why I love breakfast potatoes

Breakfast potatoes hold a special place in my heart. There’s something magical about those crispy edges and tender centers that make them absolutely irresistible.

Whether you’re pairing them with eggs, bacon, or just eating them straight from the skillet, these home fries never disappoint.

When I go out to brunch I always have to get home fries. If they don’t come with onions and peppers, I’m always disappointed. This easy home fries recipe is my ideal and favorite way to enjoy breakfast potatoes.

Ingredients for home fries

Diced potatoes, onions, green peppers, red peppers, olive oil, butter and seasonings.
  • Yukon Gold Potatoes: I love using these for the best texture and flavor.
  • Red Peppers: Adds sweetness and color.
  • Green Peppers: Adds a bit of freshness and crunch.
  • White or Yellow Onions: To add that savory depth.
  • Butter: One tablespoon, regular or vegan, to help everything cook up nicely.
  • Olive Oil: Use as needed to keep the potatoes from sticking and to add a nice crisp.
  • Salt: Half a teaspoon to enhance all the flavors.
  • Paprika: Adds a subtle smokiness.
  • Garlic Powder: A quarter teaspoon for that extra kick.
  • Pepper: Just enough to taste and bring it all together.

How do you make home fries?

Boil the diced potatoes in enough water to cover them by an inch for 5 minutes. Drain and set aside.

While the potatoes boil, melt butter in a skillet over medium to medium-high heat. Sauté the onions and peppers until soft and translucent, then set aside.

Add olive oil to the skillet and cook the potatoes, seasoning with salt, pepper, paprika, and garlic powder.

Stir and cook until the potatoes are golden, about 15 minutes.

Add the onions and peppers back in, cook for another 2 minutes, then serve and enjoy!

Recipe Tip

When dicing the potatoes try to make them small. If they are on the large side, you will need to parboil a few minutes longer than the recommended time in the recipe.

Easy Home Fries

Crispy, flavorful and perfect for breakfast or brunch. Made with yukon gold potatoes and the perfect blend of spices, peppers and onions.
Prep: 10 minutes
Cook: 25 minutes
Servings: 4 servings

Ingredients 

  • 3 cups Yukon Gold Potatoes, diced
  • 1/3 c red peppers, diced
  • 1/3 c green peppers, diced
  • 1/3 c yellow onions, diced
  • 1 tbsp unsalted butter
  • olive oil
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Pepper

Instructions 

  • In a saucepan bring enough water to a boil to cover the potatoes by 1 inch. Boil the diced potatoes for 5 minutes. Drain and set aside.
  • While the potatoes are cooking, melt the butter in a pan/skillet over medium heat. Add the onions and peppers, cook stirring occasionally until they are soft and translucent. Remove those from the pan and set aside.
  • In the same pan, add a little olive oil about 1/2 tbsp and add in the potatoes. Season with the salt, pepper, paprika and garlic powder. Stir it up. Add more olive oil if the potatoes seem like they are dry. Cook for 15 minutes or until the potatoes are nice and golden.
  • Add the onions and peppers to the golden potatoes and cook for two minutes.
  • Remove from the heat, serve and enjoy.
