These cheesecake stuffed strawberries are so quick and easy to make. The graham cracker crumbs on top make them feel like tiny no-bake cheesecakes, and honestly, they disappear fast.

Variations

Try a flavored cream cheese. You can absolutely use a flavored cream cheese for a fun twist. Strawberry, blueberry, cherry or raspberry cream cheese all work well in this recipe.

Ditch the graham crackers. I like to switch up the cookies used in this strawberry cheesecake recipe sometimes. Ginger snap, Biscoff, or shortbread cookies all work well.

Yes, but they taste best the same day. You can prep them a few hours ahead and keep them chilled until serving.

How long will this last in the fridge?

If you don’t want to fill all the strawberries at once that is fine but this will last in the fridge no more than a day or two. The stuffed cheesecake strawberries are meant for immediate consumption really.

Cheesecake Stuffed Strawberries

These cheesecake stuffed strawberries are sweet, creamy, and filled with vanilla cheesecake filling and graham cracker crumbs.

Ingredients 

  • 1 pint strawberries, hollowed
  • 8 oz cream cheese, softened
  • 3/4 cup confectioners sugar, powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup Graham crackers , crushed

Instructions 

  • Wash and hollow out the strawberries. I like to use a teaspoon to do this.
    Cored strawberries.
  • Add the cream cheese, sugar and vanilla extract in a mixing bowl. Mix together with an electric stand mixer or hand mixer until nice and smooth.

  • Place the filling in a piping bag and pipe into each strawberry.

  • Sprinkle graham cracker crumbles on the stuffed strawberries. Eat and enjoy!
