These cheesecake stuffed strawberries are so simple you really don’t need many ingredients.

  • Strawberries – A whole pint of strawberries, about 1lb is needed.
  • Cream cheese – Cream cheese is a necessity for any strawberry cheesecake recipe.
  • Sweetened condensed milk – This is optional but I think it helps so much with the creaminess of the cheesecake stuffing.
  • Confectioners sugar- A.K.A powdered sugar. This is a must to add sweetness.
  • Vanilla extract- The key to enhancing the flavors of almost any dessert.
  • Graham crackers – Is it really a cheesecake without graham crackers? I don’t think so.

How to make cheesecake stuffed strawberries

Rinse the strawberries really well. Hollow out the strawberries by using a pairing knife. Or you can use a strawberry huller or corer if you have one available.

Put the cream cheese, condensed milk, powdered sugar, and vanilla extract in a mixing bowl. Mix together until nice and smooth using an electric hand mixer or a stand mixer.

Using a piping bag or a spoon begin to fill each strawberry with the cheesecake filling.

Place the graham crackers in a ziplock bag and use a rolling pin to crush them. Lightly dust the strawberries with the crushed graham crackers.

For a cool switch up, using strawberry cream cheese works well too for this recipe.

Feel free to not use the sweetened condensed milk. Although I think it’s a nice touch to this recipe, you can just increase the amount of powdered sugar instead. Use 1 cup of powdered sugar instead of the 1/4 cup on the recipe card.

If you don’t want to fill all the strawberries at once that is fine but this will last in the fridge no more than a day or two. The stuffed cheesecake strawberries are meant for immediate consumption really.

Ingredients 

  • 1 pint strawberries, hollowed
  • 8 oz cream cheese, softened
  • 1/4 cup sweetened condensed milk, optional
  • 2 tbsp confectioners sugar, powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup Graham crackers , crushed

Instructions 

  • Wash and hollow out the strawberries.
  • Add the condensed milk, sugar, cream cheese and vanilla extract in a mixing bowl. Mix together with an electric stand mixer or hand mixer until nice and smooth.
  • Place the filling in a piping bag and pipe into each strawberry.
  • Sprinkle graham cracker crumbles on the stuffed strawberries. Eat and enjoy!

Notes

If you decide not to use the sweetened condensed milk, use 1 cup of powdered sugar instead of 1/4th cup.
