- ½ c cucumber grated, peeled
- 1 ½ c greek yogurt
- ½ tbsp olive oil
- 2 garlic cloves minced
- 1 tbsp dill chopped
- ½ tbsp mint chopped
- Salt & pepper to taste
- Squeeze of half a lemon
Grate the cucumber and Squeeze the excess water out of the grated cucumber with a paper towel.
In a bowl combine all the ingredients and stir it up real good. Yes it’s that simple.
Store in a container and enjoy as a dip or with a variety of dishes. It will last about 4 days.
