Pork and Chive Dumplings

Juicy, savory and paired with a spicy dipping sauce for the perfect meal or appetizer. These pork and chive dumplings can be made ahead and frozen for later use.

Ingredients

Filling:

  • 1 lb Ground pork
  • 1 package dumpling wrappers or wonton wrappers, circular
  • 1/2 c Red cabbage chopped
  • 1/4 c Chives finely chopped
  • 1/2 tbsp Soy sauce
  • 2 tsp Sesame oil
  • Salt to taste
  • Pepper to taste
  • 1 tsp Rice vinegar
  • 1/2 tsp Garlic powder

Dipping Sauce:

  • Mala sauce might be labeled as Szechuan Spicy sauce or spicy chili crisp
  • 1 tbsp Soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp water
  • 2 scallion stalks chopped

Instructions

  • Combine pork, cabbage, chives, soy sauce, sesame oil, rice vinegar, salt, pepper and garlic powder in a mixing bowl. Mix together really well.
  • Start filling the wonton wrappers. To easily make the dumplings, fill a small bowl with water and keep it on the side. Dip your finger into the water and gently wet to outside edges of the wonton wrappers. Take about 1tbsp of filling and place in the middle. Fold in half and press together. Repeat this. If you aren't familiar with folding dumplings or want to make them more intricate, please see my notes below.
  • Once almost all the dumplings are filled, begin to boil your water for steaming. Place the dumplings in your steamer and steam for 10 minutes. Do this in batches.
  • While the dumplings are steaming, let's make our sauce. In a small bowl combine the mala sauce, rice vinegar, soy sauce, sesame oil and water. Mix together well, add the scallions.
  • The dumplings should be done by now, I like to drizzle the sauce on top and serve on a platter with some fried rice on the side. Eat and enjoy!

Notes

Once the dumplings are finished being folded, you can easily store them in the freezer. I love to do this so I will have something delicious to eat on those days I don't feel like cooking.
