Preheat the oven to 350 degrees. Put a 9x9 baking dish with the stick of butter in it in the oven to melt.
In a mixing bowl, mix together the flour, cinnamon and nutmeg. Then add in the sugar and milk and mix until smooth. The consistency should be like pancake batter.
To another mixing bowl add the canned peaches with the syrup, brown sugar, lemon juice and vanilla extract. Give this mixture a good stir.
Take the baking dish with the butter out of the oven. Then pour half of the flour mixture on top of this and don’t mix.
Next, pour the peach mix on top of this and move the peaches around evenly. Sometimes if the canned peach slices are large, I'll cut a few in half.
Pour the remaining half of batter over the top of the peaches.
Bake in the pre-heated oven for 40 minutes or until golden brown on top.
Serve warm, eat and enjoy! I love to serve with vanilla ice cream!

Notes
What if I don’t have self-rising flour? No problem, just use 1 cup all-purpose flour mixed with 1½ teaspoons baking powder and ¼ teaspoon salt.
