Lobster Rolls (with Jamaican Jerk Seasoning)
A fiery twist on a classic with jerk seasoning and hot old bay. You'll definitely want to add these lobster rolls to your summer rotation.

- ½ lbs cooked lobster meat
- 1 tbsp jerk seasoning mild or spicy
- 1 ½ tbsp Mayo
- 1 tbsp Chives chopped
- ½ tsp old bay seasoning Hot
- Lemon juice
- 1 tbsp Butter
- Split top hotdog buns
In a bowl combine the jerk seasoning and mayo. Whisk together and add in the lobster meat. Stir with the lobster meat, add half of the chives, old bay and a squeeze of lemon juice. Stir together and put in the fridge until it’s time to assemble the rolls.
In a pan melt the butter. I like to skim off the top white layer, the milk solids, but that's optional. Once the butter is melted, toast the hot dog buns on each side.
Add the lobster meat to each bun. Top with the remaining chives Serve with lemon wedges and potato chips if you’d like. Eat and enjoy!
