Lobster Rolls (with Jamaican Jerk Seasoning)

A fiery twist on a classic with jerk seasoning and hot old bay. You'll definitely want to add these lobster rolls to your summer rotation.

Ingredients

  • ½ lbs cooked lobster meat
  • 1 tbsp jerk seasoning mild or spicy
  • 1 ½ tbsp Mayo
  • 1 tbsp Chives chopped
  • ½ tsp old bay seasoning Hot
  • Lemon juice
  • 1 tbsp Butter
  • Split top hotdog buns

Instructions

  • In a bowl combine the jerk seasoning and mayo. Whisk together and add in the lobster meat. Stir with the lobster meat, add half of the chives, old bay and a squeeze of lemon juice. Stir together and put in the fridge until it’s time to assemble the rolls.
  • In a pan melt the butter. I like to skim off the top white layer, the milk solids, but that's optional. Once the butter is melted, toast the hot dog buns on each side.
  • Add the lobster meat to each bun. Top with the remaining chives Serve with lemon wedges and potato chips if you’d like. Eat and enjoy!
