Jamaican Green Seasoning

A staple in Jamaican cooking, green seasoning, similar to sofrito, can be used in soups, stews and braised dishes.

Equipment

Ingredients

  • 1 yellow onion chopped
  • 10 cloves garlic
  • 1 scotch bonnet pepper
  • 5 green scallions chopped
  • 1 bunch parsley
  • 1 bunch cilantro
  • 2 tbsp ginger about 2 inch piece
  • 8 sprigs thyme stems removed
  • 1/8 tsp salt
  • 1/4 cup olive oil
  • 2 tbsp vinegar

Instructions

  • In a blender or food processor add all the ingredients. Blend it all up until there's a thick paste.
  • Keep pushing down the sides to make sure everything gets blended well. Add a tablespoon of water if it seems too thick.
  • Very simple!
