Jamaican Green Seasoning
A staple in Jamaican cooking, green seasoning, similar to sofrito, can be used in soups, stews and braised dishes.

- 1 yellow onion chopped
- 10 cloves garlic
- 1 scotch bonnet pepper
- 5 green scallions chopped
- 1 bunch parsley
- 1 bunch cilantro
- 2 tbsp ginger about 2 inch piece
- 8 sprigs thyme stems removed
- 1/8 tsp salt
- 1/4 cup olive oil
- 2 tbsp vinegar
In a blender or food processor add all the ingredients. Blend it all up until there's a thick paste.
Keep pushing down the sides to make sure everything gets blended well. Add a tablespoon of water if it seems too thick.
